How Pasta Die Works?

A Pasta die is important equipment that is composed of a main support, normally made of bronze. This particular kind of support is drilled with special techniques and each hole is made to house a drawing insert. Talking about the function, it is important understand individual need of the support and insert as they function in a very different way: the former must house the inserts and at the same time withstand the mechanical stress caused by the pressure of the press extruder driving the dough.

Normally, the pressures applied here is very high (110-120 bar), so the support is always suitably thick (100 mm). The drawing insert must let the pasta pass through the openings arranged so as to create the desired shape: so it, too, must withstand mechanical stress, but at the same time it must "govern" the dough passing through without moreover straining it due to excessive friction.
